Go to each quiz question, look for the small 'eye' icon on the timeline for that slide. Click this icon to hide all objects on the slide. If any of the default captions have been replaced with non-quiz slide captions, then you will see captions disappear from the slide. The eye icon cannot hide default objects on quiz slides, only added objects. Any quiz question where you see captions disappear will need to be rebuilt from scratch by inserting new slides.
