Choose Widgets Workspace, and it is a static widget, you should see it in the list in the Widget Panel. You can find them in the Gallery folder (which is a subfolder of the Captivate installation folder)/

As for reporting the variables to a LMS, that depends on the LMS you are using, some of them can have variables reported, some not.
